For anyone looking to master the spices in their spice rack, this workshop is for you. We'll start with some fun spice games to get to know each other and introduce the most essential spices. You'll gain confidence in basic techniques like toasting, blooming, boiling, and my favorite: tempering (chaunk). Afterwards, we'll cook a spicy dinner together, applying all the techniques and flavor combinations we've learned.

Examples of what we will make:

  • Butter paneer with homemade garam masala & turmeric pitas
  • Seasonal vegetables with whipped ricotta & dukkah
  • Roasted broccoli salad with dates and homemade ras el hanout
  • Marinated aubergine with pink pepper and mint
  • Mushroom skewers with isot biber
  • Middle Eastern beans with tahini & crispy chili oil
  • Preserved lemon–basil salsa with cloves

From wild fermented lemonades to naturally bubbly drinks packed with probiotic goodness: spring has almost sprung, hence the best moment to freshen up your drink game!

During this 2.5-hour Spiced Fermented Drinks workshop, fermentation expert (and former restaurateur) Diane will come to Amsterdam to host a spiced-up version of her signature workshop together with Sophie Fleur.

You’ll learn a variety of simple, hands-on techniques to create the tastiest fermented beverages right in your own kitchen, using fresh, seasonal ingredients and (mostly) organic spices. We’ll guide you through the basics of making your own raw fermented syrup, show you how to prepare a fermented starter for all kinds of naturally bubbly drinks, and teach you how to make a delicious wild-fermented lemonade with exciting new spice combinations.

By the end of the workshop, you’ll feel confident and inspired to make these nourishing, family-friendly drinks at home. You won't leave feeling hungry since we'll be serving a big bowl of seasonal veg soup with sourdough on the side.
